Ingredients

For one biscuit:

  • Kefir — 1 cup
  • Sugar — 0.5 cups
  • Flour — 1 cup
  • Eggs — 2

  • Cocoa — 2 tablespoons

You will need 2 sponge cakes for the cake.

For the cream:

  • Sour cream 25% — 200 g
  • Powdered sugar — 3 tablespoons
  • Boiled condensed milk — 1 jar

Alternative: cream made from 200 g butter, 200 g sour cream, and 0.5 cups sugar — also very tasty!

Preparation

1️⃣ Sponge cake

  1. Beat the eggs with sugar for 2–3 minutes until the mixture becomes fluffy and light.
    💡 Tip: Eggs at room temperature beat better, and the sponge cake will be taller and fluffier.
  2. Add kefir, baking soda, flour, and cocoa, beating gently until the batter is smooth.
  3. Pour the batter into a 22 cm diameter pan. Bake at 180°C for about 25–30 minutes. Check for doneness with a toothpick.
    💡 Life hack: if the top of the sponge cake is browned but the inside is still moist, cover it with foil and bake further.
  4. Cool the sponge cake and cut each into two layers.

2️⃣ Cream

  1. Whip the sour cream with powdered sugar until smooth.
  2. Add the boiled condensed milk and beat for a couple more minutes.
    💡 Tip: it is best to beat the cream with a mixer at medium speed so that it is airy but does not separate.

3️⃣ Assembly

  1. Spread the cream between the layers, carefully assembling the cake.
  2. Refrigerate for at least a couple of hours so that the cake is well saturated.
  3. Decorate to your liking: with biscuit crumbs, grated chocolate, or berries.
    💡 Life hack: to prevent the chocolate shavings from melting on the cream, sprinkle them on just before serving.
